The last time we made ice-cream at home was about a year ago - we made matcha (green tea) ice-cream for our ice-cream moon cakes.
Ingredients:
300 ml thickened cream
150 ml milk
0.3 cup sugar
2 tablespoons Matcha (green tea) powder (I bought mine from Phoon Huat)
Instruction:
- Warm the milk in a saucepan over low heat, do not boil it. Add Matcha powder and sugar into the warm milk. Stir until matcha powder and sugar are dissolved. Allow the mixture to cool.
- Whip the cream until it is thick and stiff.
- Fold the mixture from Step 1 into the whipped cream using a spoon or spatula.
- Put the Matcha ice-cream into the freezer. Take it out for every 1 hour to mix well, this minimises the formation of crystals in the ice-cream and improves the texture. Repeat this step for 2 to 3 times.
- Freeze it for a few hours or overnight.
